At intermission, the audience mills around the lobby. Murmuring conversation fills the space; glasses clink, Perrier softly bubbles, cans of beer open with a metallic snap. Drinks are downed before the bell rings to signal the imminent second half of the performance. Unlike in sporting culture, in many formal musical contexts there is often a strict line between consumption and the entertainment itself. You might sip wine at intermission, but certainly not during an aria. This, of course, is not true of all musical performances: at a jazz bar, for instance, one might very well enjoy a meal and a beverage during the show. Expectations around food, drink, and musical performance are therefore entwined with genre, class, and venue, and their associated—often unspoken—standards for audience behavior.
