This symposium explores the rapidly evolving field of cultivated meat, a transformative but contentious technology at the intersection of food production, sustainability, and cultural identity. From its historic debut in 2013 to recent breakthroughs in cost reduction, regulatory approval, and scaling toward commercialization, cultivated meat promises to revolutionize food systems by enhancing food security, reducing environmental impacts, and eliminating animal cruelty. However, its emergence has sparked significant backlash from traditional agricultural stakeholders, cultural conservatives, and policymakers, underscoring the complex interplay of legitimacy, authenticity, and societal values. Bringing together an interdisciplinary panel of scholars, industry leaders, and advocates, this symposium examines the theoretical and practical challenges cultivated meat poses to entrepreneurship, organization theory, and strategic management. Presentations address key issues, including category formation, the cultural clash over legitimacy and authenticity, supply chain bottlenecks, and the tensions inherent in oppositional market categories. These discussions are complemented by a practitioner panel and collaborative dialogue, aimed at bridging academic insights with actionable strategies to advance the development of cultivated meat as a viable and transformative industry. By engaging with foundational questions about cognitive categorization, innovation ecosystems, and the role of social-symbolic dynamics in legitimating novel technologies, this symposium offers a rich platform for exploring the broader implications of cultivated meat. It invites Organization and Management Theory, Entrepreneurship, and Strategic Management scholars to consider new frameworks and approaches for navigating the challenges of industry emergence in a contested cultural and regulatory landscape.
