Résumé
Die Lebensmittelsicherheit hängt von zuverlässigen, widerstandsfähigen Herstellungsprozessen ab. Lebensmittelverarbeitungsanlagen müssen sich zwischen den einzelnen Chargen oder verschiedenen Produkten leicht reinigen lassen und resistent gegen Verschmutzung sein. Dies zu erreichen und dabei gleichzeitig die Auswirkungen auf die Umwelt und den Ressourcenverbrauch auf dem Weg zu »Netto-Null-Emission« zu minimieren, ist die Herausforderung des Jahrzehnts. Um zu verstehen, wie dies für neue und bestehende Produkte erreicht werden kann, ist der Beitrag vieler Akteure, wie Lebensmittelwissenschaftler, Mikrobiologen, Ingenieure und Experten und Entscheider aus der Industrie erforderlich.
