Ecologically Sustainable Practices in School Food Programs: Considerations in a Canadian Context

The aim of this thesis is to develop considerations for environmental sustainability in Canadian school food programs. This is part of a study on curriculum-integrated school food programs (Good Food for Learning) and uncovering participants’ experiences in the intervention schools. The research commenced with a secondary analysis of interviews conducted with staff members at two school food program intervention settings. Using a sustainability framework, staff perspectives on, and considerations of, environmental sustainability in their school food programs were analyzed for perceptions and experiences in the implementation efforts for sustainable school food programs. The staff discussed environmentally sustainable practices such as waste reduction strategies and effective training. The framework produced seven distinct themes under which staff perceptions were categorized; ‘Understanding of Environmental Sustainability’ focused on how ecological practices were understood. ‘Environmentally Sustainable Practices’ engaged with existing advances in environmental considerations within the school food program, while ‘Local Partnerships’ concentrated on relationship building with business and the community. ‘Food Procurement’ discussed sustainable means of food obtention. ‘Waste Reduction Practices’ and its subcategories revealed how excessive waste and disposal methods were considered. ‘Benefits and Challenges of Gardening’ explained how growing food is connected to a school food program. Finally, ‘Connectedness to the Natural Environment’ highlighted how each teachable moment in a school food program can further environmental sustainability. Secondly, examination of the literature on developing an environmentally sustainable school food program corroborated many of the perceptions held by staff about waste, serving practices, and policy adjustments. The literature furthered the importance of measurement tools to assess sustainable practices in school food programs. The international literature illuminated the importance of sustainable education at all levels and ensuring local healthy food for school-aged children. Informed by the secondary analysis results and an extensive literature review, recommendations include those related to the development of food policy, gardening education, waste disposal, preparation and serving practices and training on sustainable food systems. Recommendations further sustainable actions in the school food program environment with reinforced importance on curricular educational integration and waste reduction strategies.
