Abstract
Ce mémoire présente le rôle des habitudes alimentaires dans la formation et la sauvegarde de la culture des personnes immigrées, soulignant le rapport entre identité et alimentation. Pour ce faire, nous examinons comment les immigrants vietnamiens de Québec conservent, transmettent et transforment leurs traditions alimentaires à travers les générations. La famille est un noyau fondamental et primordial de la culture vietnamienne. Nous observons donc la relation entre les parents d'une part, qui transmettent à leurs enfants leur culture et jouent un rôle important dans la construction de l'identité, et d'autre part, les enfants qui héritent de cette culture et qui la transforment dans le contexte nord-américain. En examinant également l'évolution de la structure familiale des Vietnamiens qui se révèle, entre autres, dans les tâches culinaires, nous essayons de comprendre les modalités d'intégration de cette population.
