Abstract
La gastronomie yucatèque a fait son apparition durant la seconde moitié du XX e siècle en tant qu’aboutissement de longs processus historiques se jouant aux niveaux local, global et translocal. Une forte opposition culturelle à la cuisine nationale mexicaine renforce la spécificité culturelle de cette gastronomie, et les ingrédients, les recettes et les techniques culinaires employés au Yucatán la relient à d’autres formes culinaires du monde caraïbe. Cet article soutient que l’apparition d’une gastronomie yucatèque distincte est née de l’inclination au cosmopolitisme d’une population locale désireuse de s’approprier et d’adapter les contributions culinaires des immigrants venus d’Europe, du Moyen-Orient, de l’Amérique du Nord et d’autres pays de la région caraïbe. Cette situation a stimulé les connexions latérales, mineures et translocales qui ont contribué à faire de l’alimentation yucatèque un métissage culturel qui a fait fusionner les pratiques et les ingrédients locaux, translocaux et globaux. J’avance que l’intégration du local au global reconfigure la part et l’importance de la cuisine yucatèque dans le marché régional, national et international des nourritures culturelles.
