La production alimentaire corse propose une gamme étendue de produits qui se distinguent souvent entre eux par la richesse des modes de fabrication. Selon les villages une même catégorie de nourriture répondra à des normes de préparation, de consommations distinctes. Une politique de défense des savoir-faire et de reconnaissance des qualités est actuellement engagée et se concrétise, entre autre, par des demandes d’AOC auprès des institutions responsables des labellisations. Elles mettent en œuvre des « systèmes d’experts » qui sont dans l’obligation de définir communément des critères de définition d’une production respectant les diversités microrégionales. De leur côté les consommateurs avisés, habitués à gérer les nuances, se trouvent déstabilisés par les récentes innovations techniques et sont confrontés à la multiplicité des versions aux origines et aux modes de transformations les plus divers. Tandis que les profanes demandeurs (touristes et importateurs) de ces produits y trouvent une ébauche de repères. La complexité générée par la nécessaire conciliation des contraires sera examinée à la lumière de deux produits emblématiques du terroir insulaire : charcuterie et farine de châtaigne.
