Depuis une quinzaine d’années environ, le vignoble québécois connaît un certain essor que ne laissaient présager jusqu’alors ni les conditions climatiques ni le goût des Québécois pour le vin. Il s’avère que, au-delà des techniques particulières nécessaires pour maîtriser les contraintes climatiques, la géographie des vignobles québécois permet de bien retracer le développement des nouvelles habitudes culturelles des Québécois en matière de gastronomie, et souligne un aspect des relations entre les pôles urbains de Montréal et Québec, et les campagnes avoisinantes.
