Abstract
La question de comment les fromages fins fabriqués au Québec sont devenus emblématiques des terroirs québécois alors qu’ils résultent de « traditions inventées » guide un travail de recherche empirique ayant pris la région de Chaudière-Appalaches pour site principal. On y a mobilisé une méthodologie relevant de l’analyse de filière et considéré, dans une perspective anthropologique, les dimensions matérielles et symboliques des procès de production, des réseaux de distribution et des stratégies de mise en marché qui caractérisent la filière fromagère. Les données recueillies à ce jour indiquent que l’engouement suscité autour des fromages fins produits au Québec pourrait être lié au déploiement d’une économie morale qui, dans le contexte de la globalisation, accorde une valeur accrue aux produits de proximité.
