Abstract
La presente etude a ete entreprise pour tester l'enrichissement en fer et iode du sel alimentaire dans une region (Brikcha, Maroc) ou les carences en fer et en iode coexistent, en particulier chez les enfants d’âge scolaire. La stabilite et l’acceptabilite du sel enrichi selon trois types de formulations (canadienne, indienne et suisse) ont ete etudiees. Les tests organoleptiques et de changement de couleur ont ete effectues durant le stockage. L’etude de ces sels enrichis a montre que la stabilite et l'acceptabilite sont en faveur de la formulation suisse (ETH). Cette derniere pourrait donc etre envisagee dans les programmes de lutte contre les carences en fer et en iode (anemie et goitre).
