The development of health-promoting foods is one of the key research priorities of food industry and it has favoured consumption of foods enriched with physiologically active components such as probiotics and prebiotics. In this context, the objective of this work was the development of a functional frozen yogurt, fermented with Bifi dobacterium (probiotic culture) and added with inulina (prebiotic). Four formulations were evaluated in terms of their physico-chemistry composition as well as their microbiological and sensorial attributes. The formulation with greatest overrun and the best sensorial evaluation was the one which contained 10% of pasteurized milk cream. The minimum quantity viable for probiotics (Bifi dobacterium after 60 days of storage at -18°C) must be within the range of 108 to 109 CFU in the daily recommendation of the product ready-to-eat, which confi rms the functionality of the developed product. The developed frozen yogurt can be considered as a differentiated, nutritive and also as a product with aggregated value
