Abstract
Les repas que nous avons observés et suivis en foyer ouvert d’éducation pour mineurs ne peuvent s’assimiler ni à un repas familial ni à un repas en cantine. Ils ont bien sûr une fonction nutritive, mais surtout socialisatrice et centralisatrice puisqu’ils permettent de rassembler au moins une fois par jour l’ensemble des adolescents fréquentant le foyer. À cette dimension se rajoutent les plaisirs commensaux (surtout à l’occasion de fêtes) et la nécessité éducative qui se concentre sur l’élaboration de menus et leur confection, sur les manières de table et sur la familiarisation à l’alimentation dite saine. Cet apprentissage, aussi important soit-il pour l’autonomie matérielle ou la future indépendance des personnes placées, est néanmoins considéré comme moins fondamental que ce qui permet de développer l’autonomie de la volonté, la communication et l’expression des émotions.
