Nano—scale structuring of foods offers exciting possibilities for enhancing the shelf life, functionality and health—promoting properties of processed foods. For example, texture—related food deterioration, e.g., bread staling, breakdown of yogurt gel, etc., all contribute to reduced shelf life. With advances in food nanotechnology, there is the real possibility that such drawbacks may be limited or eliminated. The scope of this chapter is to elucidate the contribution of microemulsions as nanostructured products for the controlled release of nutraceuticals. Initially, the properties and characterization of microemulsions are described followed by their potential applications in food.
