This chapter discusses evidence linking antioxidant nutrients with the inhibition of low-density lipoprotein (LDL) oxidation. The possibility that increasing antioxidant intake could protect against coronary heart disease (CHD) is reviewed. The chapter also provides information regarding what ideal antioxidant intakes should be.
