Abstract
This chapter attempts to explain and describe the work which has been published to date in the area of structure formation and manipulation at nano to micron-level, as investigated by diffusing wave spectroscopy (DWS) and ultrasound spectroscopy (US). It describes specifically how DWS and US have been used to follow the development of structure in various types of milk gels and oil-in-water emulsion stabilized by milk proteins. DWS and US applications are simply two more instruments in the suite of tools available to cover the wide field of variables that make up the relation between structure and texture. They are perhaps the more ‘basic’ determinants of structure, as these techniques can only assess organization up to a few microns in size. It is hoped that they will continue to be used in the future to observe the behavior of the building blocks during their assembling and disassembling in food structures.
