La gastronomie française régna au Québec durant près de quatre siècles avant d’être détrônée par la gastronomie québécoise. Ce changement de culture s’amorça avec la « Révolution tranquille » et l’Exposition universelle de Montréal en 1967. La construction d’une nouvelle identité nationale québécoise passa alors par l’affirmation des différences historiques, culturelles, linguistiques et politiques du seul bastion francophone d’Amérique, y compris sa gastronomie. Or, comme les Québécois ne sont ni Français, ni totalement Canadiens, ils durent relever un double défi d’émancipation en s’inspirant d’abord de la cuisine française pour se différencier de la cuisine canadienne à saveur plus britannique et américaine, puis en se libérant de la tutelle française pour affirmer leur propre identité culinaire. Au tournant des années 1990, cette « déclaration d’indépendance » de la première génération de chefs propriétaires québécois trouva écho dans les médias. Fini le copier-coller de mets classiques français ! Les chefs de la Belle Province avaient envie d’une cuisine à leur image. Cette renaissance culinaire fit son chemin dans l’espace public et permit de légitimer l’émergence d’une gastronomie québécoise en seulement deux décennies. Les médias ont contribué à populariser les nouvelles tendances culinaires ; néanmoins ils restent des espaces de débat, même sur un thème a priori aussi séduisant pour toute une partie de l’opinion que la défense et l’illustration de la gastronomie québécoise.
