Abstract
1Ce livre n'est pas le premier qui ait été écrit sur ce sujet resté dans les mémoires dijonnaises et nationales comme le premier épisode sérieux de la « guerre des farines », liminaire aux difficultés de Turgot et, plus généralement, à celles qu'allaient connaître Louis XVI et ses principaux ministres.Mais il vient après que la réflexion des historiens eut beaucoup progressé, à la fois sur les subsistances et sur les troubles que causent le manque et la cherté des grains.Le livre est nourri de ces avancées et il vient lui-même apporter des réponses neuves sur cet épisode, et, au-delà, sur les logiques des foules en colère.
