Abstract
Introdução: A hipertensão arterial é considerada ao mesmo tempo, doença e fator de risco, representando um dos maiores desafios em saúde pública. A ingestão de sal vem sendo considerada um importante fator no desenvolvimento e na intensidade dessa doença. Objetivo: Avaliar a quantidade de sal oferecido no almoço dos funcionários de um Hospital Público de Porto Alegre. Métodos: Através da análise das fichas técnicas avaliou-se o per capita de sal das carnes, do arroz, das leguminosas e das guarnições referentes ao almoço servido aos funcionários do hospital. Para análise estatística utilizou-se média e desvio padrão. Resultados: Analisou-se 19 cardápios. O valor médio de sal per capita nas refeições foi de 4,97±0,88 g, representando 83% do valor diário recomendado pelo Programa de Alimentação do Trabalhador. As carnes foram as que obtiveram maior valor per capita médio de sal, que foi de 1,67±0,31 g, seguido pelo arroz, 1,48 g, as guarnições apresentaram um per capita médio de sal de 1,07±0,25 g, e por último, as leguminosas, com 0,68±0,28 g. Conclusão: Constatou-se que a quantidade de sal oferecido excede o valor diário recomendado pelo Programa de Alimentação do Trabalhador.
