Abstract
非加熱食肉製品である生ハムにおいて，10°C，嫌気条件下でのL. monocytogenesの挙動に対するaw およびくん煙が及ぼす影響について，異なる4機関で検討した．（1）aw0.94以上0.95未満の範囲にある生ハムについて，くん煙やくん液処理を行わない試料ではL. monocytogenesの増殖が見られた．aw0.93未満では増殖は見られず，awの影響は大きいと考えられる．（2）aw0.94以上0.95未満の範囲にある生ハムについて，くん煙処理もしくはくん液処理を行った場合，L. monocytogenesの増殖が抑制された．その際のフェノール類濃度は0.6 ∼12.2 ppmの範囲であった．
