Abstract
Basé sur une enquête qualitative menée à Genève sur les pratiques alimentaires, cet article analyse les effets contrastés de la diffusion toujours plus large des normes diététiques au sein de l’espace social. Alors que les dispositions gustatives (ce que les individus perçoivent comme « bon ») et diététiques (ce qu’ils perçoivent comme « sain ») apparaissent comme très distinctes parmi les classes populaires, elles semblent se confondre à mesure que l’on se dirige vers les classes supérieures. Le croisement de ces deux dimensions permet de dégager un espace des rapports à l’alimentation étroitement articulé avec l’espace des positions sociales. Au final, l’enquête montre qu’une version nuancée du modèle légitimiste exposé par Pierre Bourdieu dans La Distinction demeure pertinente pour l’analyse des pratiques alimentaires contemporaines.
