Abstract

A polpa de açaí é consumida na forma de sorvetes, cremes e licores, porem, tem causado infecções aos consumidores pela falta de higiene na sua manipulação, o que leva à contaminação por enterobactérias. Investigou-se a contaminação por bactérias em polpas pasteurizadas de açaí, comercializadas em uma cidade do sul de Minas. Foram coletadas 10 amostras (6 embaladas à granel [a] e 4 embaladas individualmente [b]), de diferentes marcas e locais. A metodologia empregada foi a RDC Nº 12, de 2 de janeiro de 2001. As amostras a granel, 1a (10-3), 2a (10-2) e 9a (10-3) apresentaram crescimento significativo no caldo verde brilhante, e contagem excedente a 1 colônia/grama (Proteus spp.). As amostras 1a e 9a cresceram no Caldo Escherichia coli (10-3) com isolamento de Escherichia coli. A contagem padrão em placa de bactérias aeróbias mesófilas revelou que as amostras 8a (2X106) e 10a (30X106) apresentaram crescimento superior a 106. Todas as 10 amostras foram aprovadas para o teste de Salmonella spp. e as 4 amostras de embalagem individual aprovadas no teste para coliformes totais e fecais. Foram reprovadas 5 (83.33%) amostras de embalagem à granel. Concluiu-se que mesmo em polpas pasteurizadas, a contaminação pode acontecer, provavelmente pela manipulação da embalagem.
