Abstract
Sourriture et symbole Le maïs bleu chez les Hopi Cet article explore le rôle culturel du maïs chez les Hopi du sud-ouest américain. Il montre que le maïs bleu constitue à la fois un symbole culturel clé et la principale source de nutriments de leur régime alimentaire. Du point de vue bioculturel, les élaborations symboliques dont il est l'objet ont pour effet de favoriser le maintien d'une pratique culinaire standardisée, qui contribue à accroître sa valeur nutritionnelle et à donner à son produit caractéristique, le pain piki. des propriétés de conservation remarquables. Le symbolisme alimentaire, dans cette perspective, peut être vu comme un déterminant essentiel de l'adaptation de la population hopi à son environnement désertique.
