Abstract
Cet article est consacré à l'étude de la nature et des rouages du marché de la morue en France au XVIIIe siècle. Une enquête sur la consommation a montré que la morue est un aliment des villes, plus particulèrement de celles du littoral. Contrairement à ce que soutient un bon nombre de contemporains, la morue est une aliment cher et recherché et sa consummation apparaît forte surtout parmi les citadins nantis. Nous avons constaté un recul important de la consommation de la morue dans plusieurs institutions fran- çaises au cours du XVIIIe siècle. Bien que desfacteurs matériels comme les guerres aient contribué à ce déclin, celui-ci semble davantage l'expression d'un relâchement de la pratique et des contraintes du maigre et d'une mutation de la sensibilité alimentaire.
