Abstract
On étudie ici dans les grandes lignes un aspect de l'alimentation à Montréal au début du XIXe siècle, soit les habitudes alimentaires. Le fait que les marchés et magasins de Montréal regorgent d'une grande variété d'aliments ne se reflète pas nécessairement dans la consommation réelle. À l'aide, entre autres sources, de livres de comptes, on tente de reconstituer les menus de deux groupes, les travailleurs du canal et les riches élites, en tant qu'ils représentent les strates inférieures et supérieures de la structure sociale de la ville. Comme dans les autres sociétés, c'est la classe plutôt que l'ethnicité et les préférences personnelles qui rend compte des différences marquées dans les catégories d'aliments consommés par ces deux groupes et dans leur qualité. En outre, l'alimentation des travailleurs du canal emprunte aux menus de l'ère industrielle bien qu'elle garde certaines caractéristiques pré-industrielles.
