Antifrost‐Glycoproteine (AFGPs) in den Körperflüssigkeiten von Polarfischen verhindern das Einfrieren durch Unterdrückung des Eiskristallwachstums. Die relevanten Strukturmotive der AFGPs wurden durch eine Kombination aus chemischer Synthese und spektroskopischen Analysemethoden aufgedeckt. Die amphiphilen AFGPs bilden eine dreifach linksgängige Achse, die es den Zuckerdomänen ermöglicht, sich an einer Seite des Proteins zusammenzulagern.
