Les rapports de la ville et du goût ont peu fait l’objet de recherche. Afin de contribuer à ouvrir ce chantier de réflexion, trois pistes principales sont explorées. La première s’interroge principalement sur la manière dont les villes, pour des raisons historiques, géographiques et culturelles, auraient développé des « savoriels » propres c’est-à-dire des systèmes de saveurs uniques qui seraient en quelque sorte leur signature. La seconde piste tente de montrer en quoi l’amour de la bonne chère à Montréal a des effets réels sur l’aménagement du temps et de l’espace urbains. Enfin, dans une perspective prospective, nous entrevoyons un accroissement des relations entre la ville et le goût, notamment à travers le développement de circuits gourmands, l’affirmation de villes-jardins comme nouveaux centres de production de nourriture et la création de nouvelles institutions consacrées au goût.
