Abstract
This study attempts to explore the strategies of glocalization of overseas Korean restaurant with Vancouver restaurants. For the purposes, the study closely inquires into Vancouvers restaurants to derive strategies for glocalization of Korean foodservice industry. As a true mecca of gourmet food from all over the world, Vancouver is considered one of the leaders of global culinary culture. Vancouvers popular restaurants are also the citys hot spots for exchange of cultural values and social interactions, and many of their famous chefs share their own cultural experiences and traditions through their tasty creations. These chefs utilize fresh, organic, local, and seasonal ingredients along with their traditional cultural techniques to create breathtakingly tasteful cuisines unique to Vancouver. Toward glocalization of Korean food, this study suggests creating culinary fusion between Korean culture and those of the global world through accurate interpretation of regional cuisines and utilization of fresh and local ingredients. Also, Korean People has to develop glocal cultural awareness, and brand-chefs should be trained by a public institution.
