Abstract
When consumed in sufficient amounts, plant\nsterols 1 are associated with reduced blood levels of\ncholesterol. Because elevated blood cholesterol levels\nhave been identified as a risk factor for coronary heart\ndisease, there is considerable interest from the food\nindustry in marketing the cholesterol-lowering effect by\nselling plant sterol-fortified products carrying health\nclaims. The Food Directorate of Health Canada has\nassessed the validity of this claimed effect as well as the\nsafety of plant sterol addition to food products in\nresponse to industry petitions.
