Abstract
Le Dr Baillargeon est professeur agrege a la Faculte de medecine de l’Universite de Sherbrooke et gastroenterologue au Service de gastroenterologie du Centre hospitalier universitaire de Sherbrooke. Quelles sont les caracteristiques de la maladie? La maladie coeliaque est beaucoup plus frequente qu’on l’avait cru initialement. On estime, en effet, que 0,5 a 1 % de la population en serait atteinte. La maladie est caracterisee par une destruction de la muqueuse de l’intestin grele, pouvant entrainer des deficits d’absorption. Cette destruction est le fruit d’une reaction immunitaire contre le gluten, chez des individus genetiquement predisposes. Quant au gluten, c’est un ensemble de proteines retrouvees dans le ble, le seigle, l’orge et, dans une moindre mesure, l’avoine.
