Abstract
A descoberta de um sistema de defesa mucoso imunoenzimático, aliado aos avanços da imunologia demonstram a necessidade do conhecimento dos seus conceitos e suas possíveis interrelações frente à instalação e progressão do processo cariogênico. Diante deste fato, o presente trabalho se propõe realizar uma revisão de literatura, a cerca destes conhecimentos, buscando verificar a sua relação com os microorganismos e o desenvolvimento da doença cárie.
