Abstract
Lipases are enzymes able to hydrolyze the ester bond of long-chain acylglycerols. This work aimed to investigate the production, optimization and characterization of Fusarium verticillioides lipase and its application on fatty acid production and fat particles hydrolysis. Response surface methodology (RSM) was employed to optimize the production. Adams medium was used in the submerged fermentation, at 30°C for 96h.
