The field of drying is very dynamic with a high demand of innovation, research, and development. This chapter reviews some novel drying systems and applications based on literature sources. One of the most promising pathways for drying system improvement today and in very near future is the use of superheated steam as drying agent because of its ability to increase the product quality while reducing the operational costs. Heat pump dryers and special chemical heat pump dryers bring some good promise as advanced methods for drying, with better exergy efficiency and better capability of using renewable energy sources. Spray drying systems show impressive progress and a continuous expansion of their application domain. The chapter also presents other methods such as ultrasound-assisted drying, membrane air drying, and enhanced evaporative cooling.
