Abstract
酢じめゲル調製における酢酸浸漬工程において,酢じめゲルの形成に与える卵白の影響について調べた。調製した坐りゲルは,酢酸溶液浸漬中にすり身中に含まれるプロテアーゼによって崩壊したが,卵白またはプロテアーゼインヒビター(PI)を添加して調製した坐りゲルは酢じめゲルを形成した。また,卵白と PI の両方を添加したものは,いずれか一方を添加したものよりも有意に高い破断応力を示した。これらのことから卵白の酢じめゲルの形成に及ぼす影響の一つとしてプロテアーゼインヒビターとしての効果が挙げられた。
