Abstract
У статті визначено перспективність створення харчових функціональних продуктів з використанням рослинних інгредієнтів, зокрема ячмінно-солодового екстракту, який успішно використовується в оздоровчо-профілактичному харчуванні здорових людей з метою поліпшення обмінних процесів в організмі. Удосконалено сучасну технологію виробництва м'якого маргарину на обладнанні фірми "Alfa Laval", яке широко використовується на підприємствах оліє-жирової галузі України. З метою підвищення стабільності маргаринової емульсії при зберіганні, за рахунок уповільнення перекристалізації жиру, додатково у водну фазу був введений ячмінно-солодовий екстракт. Розроблено покращену рецептуру м'якого маргарину "Вітамінний" 82% жирності з поліпшеною кристалічною структурою та подовженим терміном зберігання.
