Abstract
Le présent article se propose d'analyser l'évolution récente de la filière acéricole québécoise (Canada). Indéniable produit identitaire, le sirop d'érable a également tout du produit de terroir (influence des lieux, savoir-faire et surtout variabilité des coulées et millésimes), même si cette idée, évidente pour un géographe européen, est neuve outre-atlantique. Or, dans une troublante analogie avec notre PAC et ses effets pervers, la filière acéricole s 'est organisée de façon à permettre le passage en une génération d'une production artisanale à une production industrielle standardisée qui nie tout terroir. La rationalisation de la production et surtout de la commercialisation n 'a pas empêché et même a pour une large part engendré une crise de surproduction. Les responsables de la filière tentent de trouver une solution dans le développement des marchés extérieurs, mais la solution n 'est-elle pas plutôt dans la reconnaissance et la valorisation des produits de l 'érable comme produits du terroir, sur le modèle des huiles, du miel ou même du vin en Europe ?
