Abstract
Les jeunes représentent les générations futures de consommateurs. A cet effet, Labrecque et al (2006) se sont intéressés à l'effet de la culture sur les attitudes alimentaires des jeunes consommateurs des collèges et universités du Canada français, de la France et des Etats-Unis. C'est dans la même lancée, que cette étude a tenté de cerner l'effet de l'information nutritionnelle sur l'acceptation et les attitudes des jeunes consommateurs envers les aliments fonctionnels. Après avoir obtenu des facteurs sensés appréhender les attitudes alimentaires des jeunes, à partir de l'analyse factorielle en composante principale, l'analyse de variance ANOVA indique que ceux qui possèdent des connaissances en nutrition (étudiants en nutrition) ont une attitude plus favorable envers les aliments fonctionnels. Une estimation du type probit ordonné a permis de déterminer les facteurs qui augmentent la probabilité d'achat des aliments fonctionnels. Ce sont notamment la confiance aux informations sur les aliments fonctionnels, les bénéfices-santé et les bénéfices-fonctionnels des aliments fonctionnels.
