Abstract
COMPENDIOMexico es el octavo productor mundial de cafe; el gasto en hogares en cafe y derivados es de unos 4000 millones de pesos anualmente. El 90% de la produccion esta concentrada en Chiapas (38.8%), Veracruz (22.6%), Puebla (17.3%) y Oaxaca (11.4%). Entre los anos 2008/9 las exportaciones subieron un 8.6% y las mismas van dirigidas principalmente a USA, Belgica, Alemania, Japon y Canada. Los sustratos alimenticios, se encuentran expuestos al ataque de hongos, entre ellos los que producen micotoxinas. Las micotoxinas son metabolitos secundarios producidos por ciertas especies de hongos, que tienen efectos negativos en la salud del hombre y los animales. Son neuro y nefro toxicas, oncogenicas y teratogenicas, ademas, producen dano pulmonar y hepatico. Las principales micotoxinas presentes en el cultivo del cafe son la ocratoxina A (OTA), las aflatoxinas, (AF) y la patulina (PAT). Existen factores que condicionan la produccion de micotoxinas, siendo los principales la temperatura y la actividad del agua, tanto para el desarrollo del hongo como para la produccion de la toxina, el pH condiciona la respuesta del hongo a estos factores
