Abstract
In order to disscuss the competent and fatty acid contents of almond as well as its utilization, the methods of super critical CO 2 extraction and Soxhlet extraction was used to get the oil sample of almond, rapeseed, sunflower seed, soybeam and sesame while the contents and competent of fatty acid were tested by gas chromato graphy.The result indicated that oil of almond had high contents of unsaturated fatty acid(93.6%),low saturated fatty acid(6.33%,lower than 7.19% of standard in America and Canada) and the oil didn′t have cardamun acid which could cause cardiovascular disease,and had low contents of palmitic acid, it did not inculude any erucic acid which was harm to reople.So in the view of nutriology, almond oil was a new vegetable oil to be developed and used.
