Abstract
Microbial transglutaminases(MTG)are a family of enzymes that catalyze post-translational modification of proteins by inter or intra-molecular crosslinking through acyl-transfer reaction.Because of the modification of protein functional properties,MTG showed a broad range of applications in the food industry,biomedicine and textile industry.In this paper,correlation techniques,research progress of constructing engineered strains which can produce microbial transglutaminase were reviewed and direction of future research was discussed detailed.
