The synthesis of sucrose palmitate catalyzed by Novo-435 lipase in organic solvent was studied,with the substrate of sucrose and palmitic acid.The effect of raw materials proportion,water content in system,reaction temprature,ratio of catalyst and palmitic acid in weight percentage,reaction time and stirring speed on the conversion were inspected.A sucrose palmitate productivity of 86.94% is obtained under such conditions as molar ratio of palmitic and sucrose 1.2∶1.0,water content 4%,reaction tempreture 65℃,catalyst dosage of 4% palmitic acid,reaction time 4.5 h and stirring speed (200 r/min).In addition,the components of sucrose palmitate was identified using TLC and IR.
