Abstract
This paper summarizes the application of polyphosphates on frozen aquatic products and the related laws both in domestic and overseas which affected on the addition of polyphosphates.The paper also introduces the mechanism of water holding capacity,usage and suggestions of applied polyphosphates in frozen aquatic products.At present,China hasn't authorized their usage in frozen aquatic products;For the international laws,America has regarded polyphosphates as General Recognized as Safe(GRAS)and allowed their use in frozen aquatic products according to Good Manufacturing Practice(GMP);As to CODEX,the maximum concentration of polyphosphates are up to 1%.Meanwhile,0.5% of polyphosphates are permitted to use in the final products,according to European Union,Brazil and Canada.
