Abstract

Firstly,the inhibitory action of hydroxy radical of VE to peony seed oil was confirmed by ultraviolet specthotometry,and the antioxidant capacity of VE was also discussed; then the relation between the antioxidant capacity and reducing power was studied in order to find the best additive amount.The results showed:95mg/L of VE could remove some of the hydroxy radical,and the removal rate was 20.54%; The best additive amount of VE was 95mg/L,VE has obvious antioxidant effect,the reducing power and concentration of the VE was linear correlation.
