Abstract
Chilled meat, delicate flavor, higher nourishment value, safety, hygiene, is a current extensively applied sales form of fresh meat abroad. But it is impossible to control the growth of the microorganism completely at 4℃. Deterioration and discoloration are usually happened during the course of storage and sale. The color of surface often turns into gray and brown, which influences appearance and acceptability seriously. In this study chilled pork was used as experimental materials, CO was used to maintain the shelf life and color stability of chilled pork. The proportion of 1%CO∶75%CO2∶24%O2 is not only extended the shelf life but also appeared attractive bright red color.
