Abstract
EDTA is a kind of good metal ions chelating agent.Different concentrations EDTA aqueous solution were used to culture barley,and compared with ones cultured by water.The results showed that EDTA could reduce the protease activity by chelating metal ions which are required to hold the protease activity,and change the content of each protein in malt.Using SDS-PAGE to analyze malt protein further could find concrete way of the transform from reserve protein to soluble protein in the change of protein component.
