Abstract

To examine the protections to biological macromoleculars against oxidative damage by several polyphenol compounds. Employ MDA determination、SDS-PAGE、agarose gel electrophoresis to research the protections to lipid peroxidation, protein oxidation, DNA oxidation induced by free radical of four compounds. The results showed Quercetin, vanillin and rutin are the most effective in inhibit lipid peroxidation, protein oxidative and DNA damage induced by free radical separately. These suggested that four compounds appear different activities in different systems. This must take into account in the use of compounds that antioxidatants as effective factors.
