Abstract
This paper briefly introduced the importance of increasing drying rate in producing pumpkin-powder. The effects of technical parameters of homogenization and drying on drying rate of pumpkin-powder were studied. The results showed that the fairly good conditions were as follows: pressure of homogenization 30MPa;temperature of homogenization 50℃; drying temperature 80℃; drying vacuum about 0.08MPa.
