Effect of Iodide Stress on Growth Indexes and Vitamin C Content of Mung Bean's Germination and Sprouting

Abstract
Studing different concentration of iodide stress on germination and sprouting of mung bean by measuring the growth indexes,such as length of true leaf etc.,and vitamin C content of sprouts. The results showed that every growth index and Vc content significantly promoted in the low iodide concentration( ≤80 mg / L),and then inhibited in the high iodide concentration( ≥100 mg / L),which not significant with the control check group. The suitable concentration and time of mung bean germination and sprouting was 40-80 mg / L,72 h,respectively.
