The properties of new Canadian beer barley-AC Metcarlfe were as follows: the weight of 40.86 g/1000 granule, moisture content 11.05%, germinating capacity 99%, germination rate 100%, water enzyme 5%, and protein content 11.82%. The small-scale production tests, the large-scale production tests and the brewing tests indicated that AC Metcarlfe possessed the foDowing prop-erties in production-no dormant period, moderate protein contents, strong water uptake ability, high germination rate, strong sacchari-fication power of barley malt and high extracts contents, and relatively low β-glucosan contents; and the characteristics in brewing were as follows: relatively short saccharification period; quick sugar dropping and good diacetyl reductibility; relatively mild taste of test beer; normal manifestation of ions and flavoring components of test beer; standard TBA and RSV values; pure and mild taste of product beer and relatively long aging resistance period.(Tran. by YUE Yang)
