Abstract
Soybean whey,a discarded byproduct in the production of soybean protein isolate,contains whey protein,oligosaccharides,isoflavones and so on.Soybean isoflavones are highly attractive because they have some important physiological properties,such as antitumor activity,antioxygenic activity,preventing osteoporosis and so on.In this article,the extraction of soybean isoflavones from soybean whey by ethyl acetate was studied.The results showed that after extraction of three times,87.2% of isoflavones was transferred from soybean whey to ethyl acetate.Therefore,extraction by ethyl acetate is a feasible method to separate soybean isoflavones from soybean whey.
