Abstract
Hormesis는 Arndt-Schulz rule로 알려져 있으며 Luckey [13]는 '잠재적으로는 위험한 수단이지만 낮은 용량으로 주 는 자극'이라고 정의하였다.이는 유해 수준 이하의 자극은 긍정적 결과를 유발할 수 있다는 것을 의미하며, 1888년 Hugo schulz에 의해 처음 그 개념이 도입된 후 다양한 방면 으로 연구가 진행되고 있다.최근 UV-light나 LED(Light Emitting Diode)와 같은 light stimulation이 메밀 새싹의 항산화물질 및 항산화활성을 높이거나[12], UV-hormesis이 딸기 생육 중 phenol성 화합물 함량을 증대[7]시키는 것으로 나타났으며, LED irradiation이 큰느타리버섯의 갓 크기나 원기의 형성은 물론 에르고스테롤의 생성에도 영향을 미치 는 것으로 보고되었다[11].또한 Aspergillus 속[6]이나 Neurospora 속에 관한 연구[17]에서도 LED가 mycelium 및 conidial 형성에 영향을 미치는 것으로 나타났다.이처럼 light stimulation이 진균류나 식물의 생장에 hormesis를 유발한 다는 사실은 다각적으로 밝혀진 바 있으나 발효중 적용사례 에 관한 연구는 아직 알려진 바가 없다.이에 본 실험에서는 Must에 상업용 효모를 접종한 후 발효액에 LED를 조사하 여 Must의 발효특성과 생리활성물질 함량 변화를 확인하 고, 와인 발효중 LED에 의한 hormesis의 유발과 이의 적용 가능성을 모색하고자 하였다.재료 및 방법 사용균주 및 와인의 제조 본 실험에 사용된 균주는 상업용 S. bayanus EC-1118 (Lallemand Inc., Canada)을 YPD broth medium(Yeast extract 1%, peptone 2%, glucose 2%)에 48시간 150 rpm
